Unlike WhatsApp or Telegram, WeChat doesn't directly read your iPhone Contacts as its friend list — WeChat contacts are managed inside WeChat. Deletion happens in the WeChat app. iPhone Contacts integration is optional (used only for 'Find friends' suggestions).
Step-by-step

Open the contact in WeChat
WeChat → Contacts tab → tap the contact you want to remove.

Delete the contact
Tap the ⋯ icon (top right) → Delete → confirm. The contact is removed from your friends list. The chat history may stay until you clear it separately.

Disconnect WeChat from iPhone Contacts (optional)
iPhone Settings → WeChat → Contacts → None. This stops WeChat from suggesting iPhone-Contacts-based friends.

Clean iPhone Contacts if needed
Delete Contacts tidies the iPhone address book independently. WeChat doesn't sync back to iPhone Contacts, so this is a separate cleanup.
