Why Zoom contact deletion is awkward
Zoom keeps its own contacts list distinct from iPhone Contacts. If you've added someone via 'Add Contact' or 'Sync Address Book', they're in your Zoom account. Removing happens in Zoom's web portal or the desktop/mobile app.

Remove from Zoom contacts
zoom.us → Profile → Contacts → My Contacts → ⋯ next to contact → Delete. Or in the Zoom mobile app: Contacts → long-press → Remove.

iPhone Settings → Zoom → Contacts → None. Stops Zoom from matching your iPhone address book to other Zoom users.
